ENFRIJOLADAS
INGREDIENTS:
FOR
4 PERSONS
12 TORTILLAS |
1 CUP OF OIL FOR FRYING TORTILLAS |
3 CUPS OF BEANS WITH BROTH |
1/4 OF PURPLE ONION CUT IN SLICES |
1/2 COOKED AND CHOPPED CHICKEN BREAST |
5.07 OUNCES OF CREAM2 DRIED TREE CHILIES |

1)Fry
the onion in a saucepan and when the onion is fried, add the beans
with their broth and cook for 10 minutes, add the chili with the
ground pepper and put everything in the blender to grind, remove the
mixture from the blender and keep it with little flame, to keep the
preparation warm.
2)Put hot oil in a pan and moisten the tortillas with the hot oil for about 2 or 3 minutes, then remove the tortillas and drain the oil, fold the tortillas in half, add the bean mixture, add the chopped chicken and cover with more bean mix
3)To accompany and garnish the preparation, add chopped coriander, onion slices and the cream on top of the tortillas that contain the bean mixture.
